Warm Asparagus Salad
5-7 aparagus spears
3 sundried tomatoes
1 tbsp pine nuts
1 tbsp olive oil
sprinkle of shaved parmesan
1 egg
Sprinkle of pepper
This is a small plate item on Cheesecake Factory's menu. I had it and loved it. So I decided it was simple to make myself. Here's the recipe:
Sautee asparagus in pan on the stove with olive oil. When they are close to being cooked, add pinenuts and sundried tomatoes. Then add to a plate and add shaved parmesan on top. Next, in the same pan, crack an egg into the pan and cook over medium. To do so crack the egg and let it start to cook, when the sides bubble up, flip the egg and let it cook on the reverse side. Add on top of your aparagus mixture and add a little pepper.
