Spinach Chicken Cordon Bleu

 

5-6 thin chicken breast slices

spinach 

deli ham

mozarella cheese string (I use Saratoga light 50 calorie)

toothpicks

 

I sautee my spinach with a little garlic and olive oil to keep it from drying out before i stuff the chicken. Cut a piece of ham in half and place on top of the chicken. Add spinach next and then cut a cheese string in half and roll the chicken and contents as tight as possible and use a tooth pick to hold in place. Do this to all the chicken. Spray olive oil spray on the baking sheet to eliminate sticking. Place the chicken in the oven for 20-25 minutes on 375 degrees. Remove toothpicks and serve.
