Spinach and Turkey Lasagna

 

1 pack lasagna noodles (as clean as possible)

15 oz. ricotta cheese

1 cup shredded mozarella 

1/4 cup shredded parmesan

1 large egg

10 oz ( a handful or so) fresh spinach

1 large bottle of marinara

1 lb ground turkey 

 

Cook your noodles according to the box. You only need half the box. Next cook your ground turkey with salt and pepper in a pan until browned. Drain turkey. Add spinach, ricotta, mozarella, egg, and a little salt and pepper to a bowl and mix. (rip spinach into pieces). Lay one noodle at a time and spread mixture evenly. Roll into a circle and add to casserole dish. Repeat until out of mixture. once they're all rolled up and in the dish. add the meat and sauce over top. Cook on 400 for 30 minutes. Add the parmesan on top for the last 5 minutes. Then wait to cool and serve
