Chicken Quinoa Stuffed Peppers

 

Ingridents: 

1 lb ground chicken (or beef)

1 cup quinoa (uncooked)

1 1/4 cup salsa

6 sweet peppers (yellow, red, and orange)

 

Cook 1 cup of quinoa on the stove with 2 cups of chicken broth for 15 mins covered. In a seperate pan, cook ground chicken. While they're both cooking, cut the tops off of the peppers and remove the seeds inside. Mix the salsa, chicken, and quinoa in a bowl. Stuff the mixture into the peppers and place in a casserole dish add a splash of water to the bottom (enough to barely cover the bottom of the dish) to eliminate burning on the bottom. Place in the oven for 35 minutes on 375 degrees.
